Proscuitto and Acorn Squash Risotto

This isn't a recipe I made on stream, but I made it for the biffle Renee and was pretty proud of the changes I made, so here you go.
I nixed the radicchio salad completely, because radicchio is gross. The squash I cut the rind off, scooped out the seeds and large diced, before putting them in the oven. I didn't use sage but instead fried prosciutto strips to use in the risotto and as garnish. I also added a few garlic cloves in with the onions, and cooked them until they were browned.
Once the risotto was finished, I added some chopped, fried proscuitto, the acorn squash, and an aged goat cheese instead of the piave cheese.
But it ended up being delicious, so WORTH
Chicken Cacciatore

We altered this recipe a little bit. Instead of the parmesan cheese, we used an aged goat cheese. We added half an onion, thinly sliced, in with the garlic and mushrooms. And we deglazed the pan when we added the tomato sauce with about a tablespoon of red wine vinegar.
We also included a basic green salad. We made the dressing by soaking one minced shallot and one minced garlic clove in a tablespoon of champagne vinegar for about 10 minutes, then whisked in extra virgin olive oil (about two tablespoons? IDK) and added salt and pepper to taste.
Pretzel Burgers

These burgers are very simple, but we definitely mixed it up and made them our own! We didn't use the cheese sauce at all, and instead of raw onion on the burger, we coated it in a bit of rice flour and made crispy fried onion rings. All in all, I felt really proud of how this came out.
